Devil's Delites

So I  somehow ended up with a zillion boxes of cake mix in my cupboards and I never use cake mix.. I decided I best come up with some recipes using them as the base so I could fit actual foods in there lol. So, here is the first of quite a few, recipes based on a cake mix. With the right ingredients added you can do wonderful things to your basic mix. This one starts with a devils food cake mix (hence the devils) and when you bite into it your mouth gets a surprise of wonderful cherries encased in all that chocolate!! Oh so yummy (hence the delites) These were moist and delish. As you will see I used several different toppings, a fluffy cherry almond frosting, a fudge frosting and cherry pie filling. You decide what sounds best for you!


Devils Delites

Ingredients:

1 box devils food cake mix
1/4 c water
3 eggs
1/3 c oil
1/2 of a container of chocolate yogurt (single serving size, you can use cherry or vanilla)
1 can cherry pie filling


Topping: your choice: fluffy cherry almond icing (recipe follows)
Cherry pie filling
Fudge icing
Or do some of each like i did : )



1. Line muffing tins with paper liners

2. Pour cake mix into a large bowl

3. Add, eggs, water, oil and yogurt

4. With mixer beat on medium speed until completely blended.

5. Fill paper liners 1/2 way with cake batter.

6. Now add a nice teaspoon of cherry pie filling to each liner.

7. Top off with more cake batter.

8. Bake in 350 degree oven for 20 to 25 minutes or until done.

9. Allow to cool completely.

10. Remove cupcakes from muffin tin and frost with desired frosting.


Cherry almond fluffy icing:

Empty a container of fluffy white icing into a small mixing bowl

Add a few spoonfulls of the glaze from the remaining cherry pie filling

Stir until well blended adding more filling until desired taste

Stir in 1/2 t almond extract
cool in frig until you are ready to use it so it stiffens up just a tad

Pipe onto cakes and top with a cherry from the remaining pie filling




For Pie filling topped cupcakes

Using an additional can of cherry pie filling, using a melon ball scooper, scoop out the top of each cupcake very carefully. Fill this hole with cherry pie filling

or top them off with your favorite fudge frosting and then use left over cherries from the pie filling to decorate

Blueberry Cherry Mini Pound Cakes

I loved dried fruit so sometimes I take a recipe and throw in some dried fruit and a few other things lol and make up something on my own. I made these today for the first time and my family loved them : ) I used my perfect brownie pan so they would come out in just the right size and precut, I'm lazy what can i say : )

The lighting makes the cake look a funny color lol



1 c dried blueberries
1 c dried cherries
1/2 c white chocolate chips
1¼ cups butter, softened
2¾ cups granulated sugar
5 eggs
1 teaspoon vanilla extract
3 cups all-purpose flour
1 teaspoon baking powder
¼ teaspoon salt
1 (14-ounce) can sweetened condensed milk
Put butter, sugar, eggs and vanilla in a large bowl. Beat with an electric mixer on low speed until blended,
then on high speed 5 minutes until light and fluffy.
Combine flour, baking powder and salt. Add flour mixture alternately with sweetened condensed milk to
creamed mixture, mixing lightly after each addition.
Fold in fruit and white chcocolate. Turn batter evenly into 6 greased and floured mini loaf pans (4½ x 2¾ x 1¼
inches). Bake in a preheated 350-degree oven for 45 to 50 minutes, or until toothpick inserted near center
comes out clean. Let cool in pans 5 minutes; invert on wire racks and let cool completely. Decorate as desired. Makes 6 mini loafs. 



If using the perfect brownie pan bake at 350 for 25 to 30 minutes.

Cherry Upside Down Cake~Bonnie Dare's Recipe

I saw this cake on justapinch.com and thought wow! Looks so yummy and its so easy! This is something I can make for dessert on a week night when time is limited! So I decided to try it last night...Needless to say there is one helping left and my family loves it! Thanks Bonnie it truly is Delish!!





The cherries start off on the top and sink to the bottom while baking, the top stays white as snow : )
1 box of white cake mix (or chocolate or yellow)
2 cans of cherry pie filling (i like ruby red)
whipped cream to taste.


Cook's Tip: I found that in my oven, it took about 50 minutes for the cake to get done. I tented it with foil to slow the browning. Check with a tooth pick in the middle and if it comes clean, it is done. Cake will pull away from the sides of the pan.
PREPARE THE CAKE:
In a large mixing bowl, place the cake mix and the ingredients according to the directions on the box. Grease a 9x13 inch metal pan with Pam. Pour the batter in the pan.
Spoon pie filling, about 2 or 3 cherries at a time, evenly distributed over the batter. All the cherries and filling will sink to the bottom while it is baking. (I know, it is hard to believe, but trust me, it is true!)

BAKE THE CAKE:
Place the cake in the oven and bake according to the package directions. Note that it may take more than the time indicated. Use the toothpick test to check if it is done. Cool the cake 15 minutes, then flip over on a foil lined tray. Cut into 12 slices to serve. Top with a dollop of whipped cream. Enjoy!

Cherry Chocolate Chip Cookies al'orange

Ok so my son wanted to make his own cookies while i was baking one day. So i gave him a choice of cake mixes to start off with (making it easier for him) and he chose orange, then i put all kinds of mixins out on the counter and told him to choose what he wanted to put in his cookies. He chose dried cherries, chocolate chips and orange extract. This is his recipe and if I do say so myself he did a great job!! Every one gobbled them up!

Cherry chocolate chip al'orange cookies (yes hunter named them)


1 bx  orange cake mix
1/4 c  vegetable oil
2 Tbsp  water
2   eggs
1/4 tsp orange extract
3/4 c   milk chocolate chips
3/4 c   dried cherries
 melted chocolate or chocolate icing for decorating


Mix cake mix, water, oil, extract and eggs together in bowl.

Fold in the chocolate chips and the dried cherries.

Drop onto cookie sheet lightly coated with cooking spray.

Bake for 10 to 12 minutes. Then cool on sheet for a minute and transfer to rack.

Decorate with chocolate if desired.
